Ingredients

  • 4 cups watermelon, diced
  • 1 cup feta cheese, crumbled
  • 1 cup fresh mint leaves
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional: toasted pumpkin seeds or sunflower seeds

Instructions

  1. Slice the watermelon into bite-sized cubes and add to a large bowl.
  2. Crumble the feta cheese over the watermelon.
  3. Tear mint leaves into pieces and scatter over the salad.
  4. Drizzle the olive oil and lime juice over the salad, adding salt and pepper to taste.
  5. Toss gently to combine, being careful not to mush the fruit.
  6. Serve immediately or wait to add mint until just before serving for maximum freshness.

Notes

Best when served fresh, but can be made a day in advance if mint and dressing are added right before serving.
