Deliciously sweet and savory roasted carrots coated in honey and maple syrup, perfect for any dinner.

Ingredients

  • 2 pounds of fresh carrots
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon maple syrup
  • Salt to taste
  • Black pepper to taste
  • Optional: pinch of smoked paprika

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and slice the carrots into sticks or thick slices.
  3. Toss carrots in a mixing bowl with olive oil, honey, maple syrup, salt, and pepper until glossy.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast for about 20-25 minutes, flipping once, until caramelized and sticky.

Notes

Carrots can be prepped ahead of time and stored in a zip-top bag in the fridge. Leftovers can be reheated in the oven or microwave.
