- 2 pounds of fresh carrots
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon maple syrup
- Salt to taste
- Black pepper to taste
- Optional: pinch of smoked paprika
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and slice the carrots into sticks or thick slices.
- Toss carrots in a mixing bowl with olive oil, honey, maple syrup, salt, and pepper until glossy.
- Spread the carrots in a single layer on a baking sheet.
- Roast for about 20-25 minutes, flipping once, until caramelized and sticky.
Notes
Carrots can be prepped ahead of time and stored in a zip-top bag in the fridge. Leftovers can be reheated in the oven or microwave.
