- 2 medium sweet potatoes, diced
- 1 can chickpeas, drained and rinsed

- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Parchment paper (for easy cleanup)
Instructions
- Preheat your oven to 425°F (220°C).
- Chop sweet potatoes and any other vegetables into bite-sized pieces.
- Toss sweet potatoes and chickpeas with olive oil and spices.
- Spread the mixture on a baking sheet lined with parchment paper.
- Bake for about 30 minutes, until sweet potatoes are tender and golden brown, stirring halfway through.
- Serve as a standalone meal or with yogurt and fresh herbs if desired.
Notes
For an extra kick, add a squeeze of lemon or lime before serving.
