Instructions
- Heat olive oil in a medium saucepan over medium heat.
- Sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and cook for another minute.
- Stir in the rice and toast for 2 minutes until slightly golden.
- Add vegetable stock; bring to a boil, then reduce heat to low and cover.
- Simmer for 15 minutes without lifting the lid.
- Remove from heat and let sit covered for an additional 5 minutes.
- Fluff with a fork and season as desired.
Notes
Rinse the rice under cold water before cooking to keep it fluffy. Customize spices and add proteins or veggies for variety.
