Ingredients

  • 4 fresh red peppers
  • 1 French baguette, sliced
  • 8 ounces goat cheese
  • Olive oil, for drizzling
  • Fresh herbs (basil or oregano), for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the red peppers until tender and slightly charred, about 15 minutes.
  3. Let the peppers cool, then peel off the skins.
  4. Toast baguette slices in the oven until golden and crisp.
  5. Spread a generous amount of goat cheese on each crostini.
  6. Add slices of roasted pepper on top of the cheese.
