- 1 cup chopped pecans, plus a handful more for the top
- 1 cup brown sugar, packed
- 1 cup light corn syrup (or maple syrup)
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 box yellow cake mix (about 15.25 ounces)
- 3/4 cup unsalted butter, melted
Instructions
- Heat your oven to 350°F. Grease a 9×13 baking dish.
- Whisk the brown sugar, corn syrup, eggs, vanilla, and salt in a bowl until smooth and glossy.
- Stir in the chopped pecans and pour the mixture into the baking dish.
- Sprinkle the dry cake mix evenly over the top without mixing it in.
- Drizzle the melted butter over the cake mix as evenly as possible.
- Scatter a handful of extra pecans on top if desired.
- Bake for 40 to 50 minutes until the top is golden and the edges are bubbling.
- Let it cool for at least 20 minutes before scooping.
Notes
Letting it rest helps the filling set and makes it easier to serve. Serve warm with vanilla ice cream for an extra treat.
