Ingredients
Scale
- 12–14 medjool dates, pitted (about 1 1/4 cups packed)
- 1 cup unsweetened shredded coconut
- 2 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- Pinch of salt

- Extra shredded coconut for rolling
- 2 oz dark chocolate, melted (optional)
Instructions
- Remove pits from the medjool dates.
- In a food processor, pulse the dates with shredded coconut, cocoa powder, vanilla extract, and salt until the mixture clumps together.
- If the mixture looks dry, add warm water or maple syrup and pulse again.
- Scoop heaping teaspoonfuls and roll between palms into 1-inch balls.
- Roll half of the balls in extra shredded coconut or drizzle with melted dark chocolate.
- Chill on a parchment-lined tray in the refrigerator for 15–30 minutes to firm up before serving.
Notes
For a smoother chocolate coating, melt dark chocolate in short bursts and stir between to maintain the right consistency. Use fresh medjool dates for best results.
