Description

A fresh and healthy layered salad in a jar that’s perfect for meal prep and on-the-go lunches.


Ingredients

Scale
  • 2 cups fresh greens (spinach or arugula)
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup chickpeas, canned or cooked
  • 3 tablespoons vinaigrette dressing

Instructions

  1. Gather all your ingredients and clean the mason jars.
  2. If desired, whisk together olive oil, vinegar, mustard, salt, and pepper for homemade dressing.
  3. Pour the dressing at the bottom of each jar.
  4. Add the cucumbers and bell peppers for a solid base.
  5. Layer in the chickpeas followed by the cherry tomatoes.
  6. Pack the fresh greens on top to keep your salad crisp.
  7. Seal the jars tightly and refrigerate until ready to eat.
  8. When serving, shake the jar to mix the dressing or pour it onto a plate.
