- 2 cups White Beans (dried or canned, soaked overnight if dried)
- 4 cloves Garlic (minced)
- 1/4 cup Lemon Juice (freshly squeezed)
- 1/3 cup Olive Oil (extra virgin)
- 1/4 cup Fresh Herbs (chopped, like parsley, basil, or thyme)
- Salt (to taste)
- Pepper (to taste)
- 1/2 teaspoon Red Pepper Flakes (optional)
Instructions
- If using dried beans, soak them overnight. Drain and cook them in a pot with fresh water until tender (about 1 to 1.5 hours). If using canned beans, rinse and drain them.
- In a mixing bowl, combine minced garlic, lemon juice, and olive oil. Whisk until blended well.
- Add the cooked or canned beans to the marinade and gently fold to coat.
- Sprinkle in fresh herbs, salt, pepper, and optional red pepper flakes. Gently fold to mix.
- Cover and let the beans marinate for at least 30 minutes at room temperature or refrigerate for several hours for better flavor melding.
- Stir gently before serving. Adjust seasoning if needed, and enjoy warm or cold.
Notes
Use fresh herbs for the best flavor. If you like it spicy, add more red pepper flakes.
