- 3 medium zucchinis (about 4 cups grated)
- 1 cup all-purpose flour (or gluten-free flour)
- 2 large eggs
- 1/4 cup green onions (finely chopped)
- 3 cloves garlic (minced)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil for frying (enough for shallow frying)
Instructions
- Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, mix grated zucchini with flour, eggs, green onions, minced garlic, salt, and pepper until well combined.
- Heat vegetable oil in a skillet over medium heat until shimmering.
- Drop spoonfuls of the batter into the hot oil and fry for about 3 minutes on each side or until golden brown.
- Remove from skillet and drain on paper towels. Serve warm with dipping sauce.
Notes
Best served warm with dipping sauce like soy sauce or a spicy Korean sauce. Can store in an airtight container in the refrigerator for up to 3 days.
