Description

Crispy and savory Korean Zucchini Fritters, perfect as a snack or side dish.


Ingredients

Scale
  • 3 medium zucchinis (about 4 cups grated)
  • 1 cup all-purpose flour (or gluten-free flour)
  • 2 large eggs
  • 1/4 cup green onions (finely chopped)
  • 3 cloves garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil for frying (enough for shallow frying)

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, mix grated zucchini with flour, eggs, green onions, minced garlic, salt, and pepper until well combined.
  3. Heat vegetable oil in a skillet over medium heat until shimmering.
  4. Drop spoonfuls of the batter into the hot oil and fry for about 3 minutes on each side or until golden brown.
  5. Remove from skillet and drain on paper towels. Serve warm with dipping sauce.

Notes

Best served warm with dipping sauce like soy sauce or a spicy Korean sauce. Can store in an airtight container in the refrigerator for up to 3 days.
