Description

A warm and cozy pumpkin baked oatmeal that combines delicious flavors with nutritious ingredients, perfect for fall mornings.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1 cup Greek yogurt
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine oats, baking powder, spices, and salt.
  3. In another bowl, mix pumpkin, Greek yogurt, eggs, and maple syrup.
  4. Combine wet and dry ingredients, then gently fold in chocolate chips.
  5. Pour the mixture into a greased baking dish.
  6. Bake in the preheated oven for 30 minutes.
  7. Allow to cool slightly before serving.

Notes

To keep baked oatmeal fresh, store in an airtight container in the refrigerator for up to 5 days. Can also be frozen for up to 3 months.
