Description

A delicious and easy dish combining grilled chicken with fresh mozzarella, tomatoes, and basil, inspired by classic Caprese flavors.


Ingredients

Scale
  • 4 boneless chicken breasts, evenly sized
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 8 oz fresh mozzarella, sliced
  • 23 ripe vine-ripened or heirloom tomatoes, sliced
  • Fresh basil leaves
  • Balsamic glaze, for drizzling

Instructions

  1. Lightly pound the chicken breasts to an even thickness and marinate with olive oil, minced garlic, salt, and pepper for 15-20 minutes.
  2. Preheat grill to medium-high heat and grill chicken breasts for 6-7 minutes on each side until internal temperature reaches 165°F (74°C).
  3. Top each grilled chicken breast with fresh mozzarella and sliced tomatoes, close grill lid for 2-3 minutes to melt cheese and warm tomatoes.
  4. Remove from grill, scatter fresh basil over the top, and drizzle with balsamic glaze.

Notes

Serve with a side salad or grilled vegetables. Can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the grill.
