A delicious and easy dish combining grilled chicken with fresh mozzarella, tomatoes, and basil, inspired by classic Caprese flavors.
Ingredients

- 4 boneless chicken breasts, evenly sized
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- Salt, to taste
- Freshly ground black pepper, to taste
- 8 oz fresh mozzarella, sliced
- 2–3 ripe vine-ripened or heirloom tomatoes, sliced
- Fresh basil leaves
- Balsamic glaze, for drizzling
Instructions
- Lightly pound the chicken breasts to an even thickness and marinate with olive oil, minced garlic, salt, and pepper for 15-20 minutes.
- Preheat grill to medium-high heat and grill chicken breasts for 6-7 minutes on each side until internal temperature reaches 165°F (74°C).
- Top each grilled chicken breast with fresh mozzarella and sliced tomatoes, close grill lid for 2-3 minutes to melt cheese and warm tomatoes.
- Remove from grill, scatter fresh basil over the top, and drizzle with balsamic glaze.
Notes
Serve with a side salad or grilled vegetables. Can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the grill.
