- 2 cups vegetable stock
- 1 medium onion, finely chopped
- 2 garlic cloves, minced

Instructions
- Heat olive oil in a medium saucepan over medium heat.
- Sauté the chopped onion until translucent (about 5 minutes).
- Add minced garlic and cook for another minute.
- Stir in the rice and toast for 2 minutes until slightly golden.
- Add vegetable stock; bring to a boil, then reduce heat to low and cover.
- Simmer for 15 minutes without lifting the lid.
- Remove from heat and let sit covered for an additional 5 minutes.
- Fluff with a fork and season as desired.
Notes
Rinse the rice before cooking for fluffier texture. You can add frozen peas or chopped vegetables during the last few minutes of cooking for extra nutrition.
