- 2 cups cooked chicken (rotisserie or leftover grilled chicken)
- 1 bag Nacho Cheese Doritos (Cool Ranch Doritos for a twist)
- 1 can cream of chicken soup (or cream of mushroom/celery soup)
- 1 cup sour cream (or Greek yogurt)
- 1 can diced tomatoes with green chilies
- 1/4 cup milk
- 1 cup shredded cheese (Mexican blend or low-fat cheese)
Instructions
- Preheat your oven.
- Grease your baking dish.
- Crush half of the Doritos into chunks and scatter them in the pan.
- In a bowl, mix together the chicken, soup, sour cream, diced tomatoes with chilies, and some shredded cheese.
- Spread the chicken mixture over the crushed Doritos in the pan.
- Sprinkle the remaining Doritos and shredded cheese on top.
- Bake until golden and bubbly.
- Let rest briefly before serving.
Notes
For a spicy kick, add jalapeños to the filling. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with foil for a crispy top.
