Description

A quick and comforting casserole that combines the fun of a walking taco in one cozy pan.


Ingredients

Scale
  • 1 pound ground beef (or turkey)
  • 1 packet taco seasoning
  • 2/3 cup water
  • 1 cup salsa
  • 1 cup black beans, drained (optional)
  • 2 cups crushed corn chips (Doritos or Fritos)
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)

Instructions

  1. Preheat your oven to 375°F.
  2. Cook the ground beef until browned in a large skillet. Drain extra grease if desired.
  3. Stir in the taco seasoning and water, letting it simmer for 2-3 minutes.
  4. Add the salsa and black beans, stirring to combine.
  5. Spread the meat mixture into a 9×13 baking dish.
  6. Scatter the crushed corn chips on top.
  7. Add the shredded cheese on top of the chips.
  8. Bake for 12-15 minutes until bubbly and cheese is melted.
  9. Let it sit for 5 minutes, then add your desired toppings and serve.

Notes

For extra crunch, bake the meat and cheese first, then add the chips for 2 minutes to maintain freshness.
