- 6 waffle cones
- 8 oz brick cream cheese, softened
- 1/2 cup powdered sugar (adjust to taste)
- 1 tsp vanilla extract
- 1 cup fresh strawberries, hulled and chopped
- 1 cup crushed graham crackers
- 1/4 cup unsalted butter, melted
- Fresh berries and mint for garnish (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract, mixing until well combined.
- Gently fold in the chopped strawberries.
- In another bowl, combine crushed graham crackers and melted butter to make the crunch topping.
- Fill each waffle cone with the cheesecake mixture, then top generously with the crunch topping.
- Serve immediately or chill until ready to serve.
Notes
To prevent soggy cones, fill them just before serving and store any leftover filling in the fridge.
