Ingredients

- 2 cups wild rice
- 2 cups cooked chicken, shredded or diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups cream of chicken soup
- 1 cup chicken broth
- 1 cup mixed vegetables (carrots, peas, etc.)
- Salt and pepper to taste
- 1 cup shredded cheddar or parmesan cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the wild rice according to package instructions, then set aside.
- Sauté the onions and garlic in a pan until translucent.
- In a large bowl, combine cooked wild rice, chicken, sautéed onions and garlic, cream of chicken soup, and chicken broth. Mix well.
- Add in the mixed vegetables, and season with salt and pepper.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- If using, sprinkle cheese on top.
- Bake for 45 minutes or until bubbly and golden brown.
- Garnish with chopped parsley or chives before serving.
Notes
Adjust the vegetables and seasonings according to taste. For variations, consider using gluten-free or dairy-free ingredients.
