Ingredients

  • 2 cups wild rice
  • 2 cups cooked chicken, shredded or diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups cream of chicken soup
  • 1 cup chicken broth
  • 1 cup mixed vegetables (carrots, peas, etc.)
  • Salt and pepper to taste
  • 1 cup shredded cheddar or parmesan cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the wild rice according to package instructions, then set aside.
  3. Sauté the onions and garlic in a pan until translucent.
  4. In a large bowl, combine cooked wild rice, chicken, sautéed onions and garlic, cream of chicken soup, and chicken broth. Mix well.
  5. Add in the mixed vegetables, and season with salt and pepper.
  6. Transfer the mixture to a greased baking dish, spreading it evenly.
  7. If using, sprinkle cheese on top.
  8. Bake for 45 minutes or until bubbly and golden brown.
  9. Garnish with chopped parsley or chives before serving.

Notes

Adjust the vegetables and seasonings according to taste. For variations, consider using gluten-free or dairy-free ingredients.
