- 2 cups heavy cream
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for caramelizing)
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the cream until steaming but not boiling.
- In a bowl, whisk together the egg yolks and sugar until pale.
- Gradually mix the hot cream into the egg mixture, stirring constantly.
- Add vanilla and stir until fully combined.
- Pour the custard into ramekins and place them in a baking dish filled with hot water.
- Bake for 30-35 minutes until set but still slightly wobbly in the center.
- Remove from the water bath and chill in the refrigerator for at least 2 hours.
- Before serving, sprinkle an even layer of sugar on top and caramelize with a kitchen torch or under a broiler.
Notes
For best results, chill the custard thoroughly before caramelizing sugar on top. Consider adding vanilla bean or a splash of liqueur for enhanced flavor.
