A classic French dessert featuring rich custard topped with a caramelized sugar crust.

Ingredients

  • 2 cups heavy cream
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for caramelizing)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the cream until steaming but not boiling.
  3. In a bowl, whisk together the egg yolks and sugar until pale.
  4. Gradually mix the hot cream into the egg mixture, stirring constantly.
  5. Add vanilla and stir until fully combined.
  6. Pour the custard into ramekins and place them in a baking dish filled with hot water.
  7. Bake for 30-35 minutes until set but still slightly wobbly in the center.
  8. Remove from the water bath and chill in the refrigerator for at least 2 hours.
  9. Before serving, sprinkle an even layer of sugar on top and caramelize with a kitchen torch or under a broiler.

Notes

For best results, chill the custard thoroughly before caramelizing sugar on top. Consider adding vanilla bean or a splash of liqueur for enhanced flavor.
