A quick and easy way to enjoy soba noodles cooked perfectly in the microwave, ideal for busy days.

Ingredients

  • 8 oz soba noodles
  • Water (enough to cover noodles)
  • 1/3 cup low-sodium tamari
  • 1 tbsp chili paste
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 4 minced garlic cloves
  • 1 tbsp fresh ginger, minced
  • Red bell pepper, sliced
  • Carrot, sliced
  • Baby bok choy, chopped
  • Green onions, for garnish
  • Sesame seeds, for garnish
  • Red pepper flakes, for garnish

Instructions

  1. Place soba noodles in a microwave-safe bowl.
  2. Add water, covering noodles by about an inch.
  3. Microwave on high for 1 minute.
  4. Stir and microwave for 30-second intervals, checking doneness after each interval.
  5. Drain and rinse noodles with cold water.
  6. In a separate bowl, mix sauce ingredients.
  7. Add vegetables and sauce to the cooked noodles.
  8. Microwave for an additional 2-3 minutes.
  9. Garnish and serve hot or cold.

Notes

For extra protein, add marinated tofu. Use a larger bowl to prevent overflow during cooking.
