- 8 oz soba noodles
- Water (enough to cover noodles)
- 1/3 cup low-sodium tamari
- 1 tbsp chili paste
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 4 minced garlic cloves
- 1 tbsp fresh ginger, minced
- Red bell pepper, sliced
- Carrot, sliced
- Baby bok choy, chopped
- Green onions, for garnish
- Sesame seeds, for garnish
- Red pepper flakes, for garnish
Instructions
- Place soba noodles in a microwave-safe bowl.
- Add water, covering noodles by about an inch.
- Microwave on high for 1 minute.
- Stir and microwave for 30-second intervals, checking doneness after each interval.
- Drain and rinse noodles with cold water.
- In a separate bowl, mix sauce ingredients.
- Add vegetables and sauce to the cooked noodles.
- Microwave for an additional 2-3 minutes.
- Garnish and serve hot or cold.
Notes
For extra protein, add marinated tofu. Use a larger bowl to prevent overflow during cooking.
