- 2 cups cottage cheese
- 1 cup fresh or frozen blueberries
- 3 large eggs
- 1/2 cup rolled oats
- 1/4 cup milk
- 1/4 cup honey or sugar (to taste)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Butter or cooking spray (for greasing)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, mix together cottage cheese, eggs, milk, honey (or sugar), vanilla, rolled oats, and cinnamon.
- Gently fold in blueberries, being careful not to mash them.
- Pour the mixture into the prepared baking dish.
- Bake for 30-35 minutes, or until the edges are golden and the middle is set.
- Let cool for a few minutes before serving.
Notes
Can be made ahead of time; mix ingredients the night before and bake in the morning. Great for leftovers!
