A delicious low-carb alternative to pizza, featuring layers of zucchini, sausage, and melted cheese in a hearty casserole.
Ingredients

- 1 large zucchini, thinly sliced
- 1 pound ground sausage
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 small onion, chopped
- 1 bell pepper, chopped
- Salt, to taste
- Pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, sauté the ground sausage, onion, and bell pepper until cooked through.
- Salt the sliced zucchini for 10 minutes, then pat dry to remove excess moisture.
- In a greased baking dish, layer half of the zucchini slices at the bottom.
- Add half of the sausage mixture and half of the marinara sauce on top of the zucchini.
- Sprinkle with half of the mozzarella cheese.
- Repeat the layers with the remaining zucchini, sausage mixture, marinara, and cheese.
- Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
- Let it cool for 10 minutes before serving, garnished with fresh basil or parsley.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze portions tightly wrapped.
