Description

A delicious low-carb alternative to pizza, featuring layers of zucchini, sausage, and melted cheese in a hearty casserole.


Ingredients

Scale
  • 1 large zucchini, thinly sliced
  • 1 pound ground sausage
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • Salt, to taste
  • Pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté the ground sausage, onion, and bell pepper until cooked through.
  3. Salt the sliced zucchini for 10 minutes, then pat dry to remove excess moisture.
  4. In a greased baking dish, layer half of the zucchini slices at the bottom.
  5. Add half of the sausage mixture and half of the marinara sauce on top of the zucchini.
  6. Sprinkle with half of the mozzarella cheese.
  7. Repeat the layers with the remaining zucchini, sausage mixture, marinara, and cheese.
  8. Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  9. Let it cool for 10 minutes before serving, garnished with fresh basil or parsley.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze portions tightly wrapped.
