- 1 lb shrimp, peeled and deveined
- 2 medium zucchini, spiralized
- 4 cloves garlic, minced
- 3 tbsp olive oil
- Juice of 1 lemon
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes, optional
- Fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté for about 30 seconds until fragrant.
- Add shrimp and cook until they turn pink, about 2-3 minutes.
- Stir in lemon juice, salt, and pepper.
- Add spiralized zucchini and toss for another 2 minutes until just tender.
- Serve garnished with chopped parsley.
Notes
Feel free to substitute shrimp with chicken or a vegan option. Cherry tomatoes can be added for extra flavor.
