- 2 medium zucchinis, sliced into half-moons
- 3 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 2 green onions, chopped
Instructions
- Wash the zucchinis and slice them into half-moons about half an inch thick.
- Heat a large skillet or wok over medium-high heat and add sesame oil until shimmering.
- Sauté minced garlic in the hot oil for about 30 seconds until fragrant.
- Add sliced zucchini to the pan and stir-fry for about five minutes until tender but still slightly crunchy.
- Drizzle soy sauce over the zucchini while stirring continuously for another two minutes.
- Serve immediately, garnished with chopped green onions.
Notes
For added flavor, sprinkle sesame seeds or a squeeze of lemon juice before serving. Customize with other vegetables or proteins if desired.
