Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the grated zucchini, softened butter, sugar, and egg until well combined.
- In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, and salt.
- Gradually incorporate the dry ingredients into the wet mixture.
- Fold in the chocolate chips until evenly distributed.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown and slightly firm to the touch.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best results, chill the dough for 30 minutes before baking and use fresh zucchini for maximum flavor.
