Ingredients

- 8 oz whole grain pasta
- 1 large cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente, then rinse under cold water to cool.
- Chop the cucumber, cherry tomatoes, and herbs.
- Whisk together the lemon juice, zest, olive oil, salt, and pepper in a bowl for the dressing.
- Toss the dressing with the chilled pasta and chopped veggies until well combined.
- Serve cold, garnished with extra herbs or feta cheese if desired.
