Description

A bright, refreshing pasta salad that combines zesty lemon, crisp cucumber, and whole grain pasta, perfect for summer gatherings.


Ingredients

  • 8 oz whole grain pasta
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente, then rinse under cold water to cool.
  2. Chop the cucumber, cherry tomatoes, and herbs.
  3. Whisk together the lemon juice, zest, olive oil, salt, and pepper in a bowl for the dressing.
  4. Toss the dressing with the chilled pasta and chopped veggies until well combined.
