Description

A bright and flavorful chicken dish marinated in lime and cilantro, perfect for quick weeknight dinners or casual gatherings.


Ingredients

  • 1/3 cup fresh lime juice (about 3 limes)
  • 1/4 cup olive oil
  • 1/2 cup packed chopped cilantro
  • 3 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 boneless skinless chicken breasts (about 1.52 lb)

Instructions

  1. Whisk together lime juice, olive oil, cilantro, garlic, cumin, smoked paprika, salt, and pepper.
  2. Marinate the chicken in a sealed bag for 30 minutes to overnight.
  3. Heat a cast-iron skillet over medium-high heat.
  4. Sear the chicken for 3–4 minutes per side until browned.
  5. Transfer to a preheated 375°F oven for 6–8 minutes, or until the internal temperature reaches 165°F.
  6. Remove from heat and let rest for 5 minutes before slicing.

Notes

Serve sliced over rice or in tacos with slaw and avocado. Can be paired with roasted vegetables or rich sides for a balanced meal.
