- 2 tbsp olive oil
- Zest and juice of 1 lime
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp kosher salt
- 1/4 tsp cayenne (optional)
- Corn tortillas (for serving)
- Toppings: avocado, cilantro, slaw
Instructions
- Slice chicken into 1/2-inch strips.
- In a bowl, whisk olive oil, lime zest and juice, chili powder, smoked paprika, ground cumin, garlic powder, onion powder, kosher salt, and cayenne.
- Toss the chicken in the seasoning mix.
- Spread the chicken on a parchment-lined sheet pan.
- Bake in a preheated oven at 425°F (218°C) for 10–12 minutes until internal temperature reaches 165°F (74°C).
- Rest for 2–3 minutes, then slice or shred the chicken.
- Warm tortillas and assemble the tacos with your choice of toppings.
