Description

A delicious and hearty dish with a robust, nutty flavor, Wild Rice Pilaf is a perfect side or main course featuring wild rice, vegetables, and aromatic herbs.


Ingredients

  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable or chicken broth
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. In a pot, heat olive oil over medium heat. Add onions, carrots, and celery and sauté until softened.
  2. Add wild rice to the pot and toast for a few minutes.
  3. Pour in the broth and bring to a simmer. Cover and cook for about 40 minutes or until rice is tender.
  4. Stir in fresh herbs and season with salt and pepper to taste before serving.
