Description

Narutomaki is a fish cake with a vibrant pink swirl, commonly used as a topping in Japanese ramen. It not only enhances the visual appeal of the dish but also adds a unique texture and mild flavor.


Ingredients

Scale
  • 6 oz white fish meat (e.g., Alaska pollock)
  • 1 tsp mirin
  • 1 tsp sugar
  • 1 tsp sake
  • 3 g cornstarch
  • 3 g salt
  • 1 egg white
  • 1 drop red food coloring

Instructions

  1. Combine the white fish meat, mirin, sugar, sake, cornstarch, salt, and egg white in a bowl.
  2. Mix until you form a smooth paste (surimi).
  3. Divide the paste into two parts. Leave one half plain and mix red food coloring into the other half.
  4. Shape the two parts into logs and roll them together to form a swirl.
  5. Wrap in bamboo and steam for 18-20 minutes.
  6. Allow to cool, then slice into rounds.

Notes

Narutomaki can be stored in an airtight container in the refrigerator for 3-5 days.
