A creamy and sweet strawberry cheesecake with a buttery graham cracker crust topped with fresh strawberries.

Ingredients

  • 1 1/2 cups (180g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted
  • 24 oz (3 packages) cream cheese, softened
  • 1 cup powdered sugar
  • 4 whole eggs + 1 egg yolk
  • 1 cup whipped cream
  • 2 teaspoons vanilla extract
  • 2 pounds fresh strawberries, sliced
  • 1/3 cup (75g) granulated sugar (for topping)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press into a 9-inch pie dish and bake for 15 minutes.
  3. In another bowl, beat cream cheese until smooth.
  4. Add powdered sugar and mix until combined.
  5. Add eggs and yolk, one at a time, mixing well after each addition. Fold in whipped cream and vanilla extract.
  6. Pour filling into the crust and bake for about 1 hour.
  7. Allow cheesecake to cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours.
  8. For the topping, mix strawberries with sugar and lemon juice, let sit until syrupy, then pour over cooled cheesecake before serving.

Notes

A water bath can help prevent cracking. Serve chilled with additional strawberry sauce for best flavor.
