- 1 1/2 cups (180g) graham cracker crumbs
- 1/4 cup (50g) granulated sugar
- 6 tablespoons (85g) unsalted butter, melted
- 24 oz (3 packages) cream cheese, softened
- 1 cup powdered sugar
- 4 whole eggs + 1 egg yolk
- 1 cup whipped cream
- 2 teaspoons vanilla extract
- 2 pounds fresh strawberries, sliced
- 1/3 cup (75g) granulated sugar (for topping)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press into a 9-inch pie dish and bake for 15 minutes.
- In another bowl, beat cream cheese until smooth.
- Add powdered sugar and mix until combined.
- Add eggs and yolk, one at a time, mixing well after each addition. Fold in whipped cream and vanilla extract.
- Pour filling into the crust and bake for about 1 hour.
- Allow cheesecake to cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours.
- For the topping, mix strawberries with sugar and lemon juice, let sit until syrupy, then pour over cooled cheesecake before serving.
Notes
A water bath can help prevent cracking. Serve chilled with additional strawberry sauce for best flavor.
