Ingredients

  • 2530 gluten-free graham crackers, crushed
  • 6 tablespoons melted butter
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1 1/2 cups granulated sugar (for topping)
  • 2 cups fresh strawberries, sliced
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix the crushed graham crackers with melted butter and press into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth.
  4. Add the sugar, eggs, vanilla extract, and lemon zest, mixing until well-combined.
  5. Pour the cream cheese mixture over the crust.
  6. Bake for 1 1/2 hours or until the edges are set and the center is slightly wobbly.
  7. Allow to cool before refrigerating for at least 4 hours, preferably overnight.
  8. Top with fresh strawberries and additional sugar before serving.

Notes
