- 25–30 gluten-free graham crackers, crushed
- 6 tablespoons melted butter
- 24 ounces cream cheese, softened
- 1 cup granulated sugar (for filling)
- 1 1/2 cups granulated sugar (for topping)
- 2 cups fresh strawberries, sliced
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
Instructions
- Preheat the oven to 325°F (163°C).
- Mix the crushed graham crackers with melted butter and press into the bottom of a springform pan to form the crust.
- In a large bowl, beat the cream cheese until smooth.
- Add the sugar, eggs, vanilla extract, and lemon zest, mixing until well-combined.
- Pour the cream cheese mixture over the crust.
- Bake for 1 1/2 hours or until the edges are set and the center is slightly wobbly.
- Allow to cool before refrigerating for at least 4 hours, preferably overnight.
- Top with fresh strawberries and additional sugar before serving.
Notes
For a lighter version, consider using low-fat cream cheese or a vegan substitute.
