  • 1 cup non-dairy milk (almond, soy, or oat)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
  3. In a separate bowl, whisk together lemon juice, lemon zest, applesauce, oil, non-dairy milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined (don’t overmix).
