Description

A comforting and flavorful Vegetarian Chili packed with beans and spices, perfect for chilly evenings.


Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Lime juice to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté onions and garlic over medium heat until fragrant.
  2. Add chopped bell peppers and carrots, cooking until slightly softened.
  3. Stir in diced tomatoes, kidney beans, black beans, chili powder, smoked paprika, cumin, salt, and pepper.
  4. Bring to a simmer and let cook for 30 minutes, stirring occasionally.
  5. Taste and adjust spices as needed. Serve hot with toppings of your choice.

Notes

For a spicier version, add chopped jalapeños or cayenne pepper. Adjust cooking time for more flavor melding if possible.
