Instructions
- Peel and chop the potatoes into uniform chunks.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- While the potatoes are boiling, heat olive oil in a pan over low heat and cook the sliced onions until golden and sweet, about 15-20 minutes.
- Once the potatoes are cooked, drain them and return them to the pot.

- Season with salt and pepper, and mix until creamy.
