- 1 can (20 oz) pineapple slices in juice, drained
- 1 cup dark brown sugar
- 1/2 cup unsalted butter (1 stick)
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 cup granulated sugar
- 3 large eggs, room temperature
- 2 tsp pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a round 9-inch cake pan with nonstick spray or butter.
- In a saucepan over medium heat, melt the butter and dark brown sugar until bubbly and smooth; pour into the prepared cake pan.
- Arrange the drained pineapple slices over the caramel mixture in a single layer.
- In a mixing bowl, combine flour, baking powder, granulated sugar, eggs, vanilla extract, and melted butter; mix until smooth and thick but pourable.
- Pour the batter over the pineapples in the pan. Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
- Allow the cake to cool for 10 minutes before flipping it onto a serving plate.
Notes
Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream. Can add maraschino cherries for garnish.
