- 4 fish fillets (cod, tilapia, or snapper)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons capers
- Fresh parsley or basil for garnish
Instructions
- Season fish fillets with salt and pepper.
- In a hot skillet, sauté the fish until golden brown and just cooked through, about 4-5 minutes per side.
- Remove fish and set aside. In the same skillet, add garlic and sauté until fragrant.
- Add tomatoes and capers, then simmer for about 10 minutes until thickened.
- Return the fish to the skillet, spoon sauce over, and let everything meld for a couple of minutes.
- Garnish with fresh parsley or basil before serving.
Notes
Serve with couscous or quinoa to soak up the sauce. This dish is perfect for meal prep and can be stored for up to 3 days in the refrigerator.
