Ingredients

  • 2 tbsp lime juice
  • 1/4 cup cilantro, chopped
  • 1/4 cup mint, chopped
  • 1/2 cup breadcrumbs
  • Salt, to taste
  • Oil, for frying

Instructions

  1. In a bowl, mix chopped shrimp, red curry paste, lime juice, cilantro, mint, breadcrumbs, and salt until combined.
  2. Form the mixture into small patties, ensuring they are sticky enough to hold together.
  3. Heat oil in a skillet over medium-high heat.
  4. Fry the patties for 3-4 minutes on each side until golden brown.
  5. Drain on paper towels and serve with a dipping sauce.

Notes

For best results, use fresh shrimp and ensure the mixture is not too wet. Serve with sweet chili or lime dipping sauce.
