- Salt, to taste
- Pepper, to taste
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 325°F (160°C).
- Season the lamb shoulder generously with salt, pepper, rosemary, and thyme.
- In a hot, oven-safe skillet, sear the lamb on all sides until browned.
- Transfer the skillet to the preheated oven and roast for 4 hours, basting occasionally.
- The lamb is done when it tears easily with a fork.
- Let the lamb rest for at least 15 minutes before carving.
