Description

A succulent roast lamb shoulder, infused with herbs and spices, perfect for special occasions.


Ingredients

  • 1 (4-5 lb) lamb shoulder
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon thyme, chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Season the lamb shoulder generously with salt, pepper, rosemary, and thyme.
  3. In a hot, oven-safe skillet, sear the lamb on all sides until browned.
  4. Transfer the skillet to the preheated oven and roast for 4 hours, basting occasionally.
  5. The lamb is done when it tears easily with a fork.
  6. Let the lamb rest for at least 15 minutes before carving.
