- 4–6 bone-in beef short ribs (about 3 lbs)
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3–4 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 cup tomato sauce
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons apple cider vinegar
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 teaspoon ground black pepper
Instructions
- Season the beef short ribs with salt and pepper on all sides.
- Press the ‘Sauté’ button on the Instant Pot and add vegetable oil.
- Once the oil is hot, add the beef short ribs and brown them for about 3-4 minutes on each side. Remove the ribs and set them aside.
- In the same pot, add chopped onion and garlic. Cook until the onion becomes soft, about 2-3 minutes.
- Pour in the beef broth, tomato sauce, soy sauce, Worcestershire sauce, apple cider vinegar, dried thyme, bay leaf, and black pepper. Stir well to combine.
- Place the beef short ribs back into the pot, making sure they are submerged in the sauce.
- Close the lid, ensure the valve is in the sealing position, and cook on high pressure for 45 minutes.
- After cooking, let the pressure release naturally for about 10 minutes, then do a quick release for any remaining pressure.
- Carefully open the lid and serve the ribs with the sauce.
Notes
Add carrots and potatoes for a complete one-pot meal. Adjust the seasoning to taste.
