Description

Delicious sweetcorn ribs grilled to perfection and tossed in a zesty lime and chili dressing.


Ingredients

  • Juice and zest of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon chili flakes

Instructions

  1. Carefully cut each cob of corn into quarters.
  2. Grill corn until lightly charred and tender, about 10 minutes, rotating regularly.
  3. In a bowl, mix lime juice, lime zest, olive oil, salt, and chili flakes to create the dressing.
  4. Toss the grilled corn in the dressing before serving.

Notes

For a spicier kick, add diced jalapeños to the dressing. Use fresh corn for maximum sweetness.
