Description

Delightful appetizer featuring sweet potato rounds topped with creamy goat cheese and a tangy cranberry balsamic glaze.


Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 ounces goat cheese, crumbled
  • 1 cup cranberries (fresh or frozen)
  • 1/2 cup balsamic vinegar
  • 12 tablespoons sweetener (honey, maple syrup, or sugar)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into ½-inch rounds and toss them with olive oil, salt, and pepper.
  3. Spread the sweet potato rounds on a baking sheet and roast for 25 minutes until tender and slightly caramelized.
  4. In the meantime, prepare the cranberry balsamic glaze by simmering cranberries, balsamic vinegar, and the sweetener until it thickens.
  5. Once the sweet potatoes are ready, top them with crumbled goat cheese and drizzle with the cranberry glaze.

Notes

For a deeper flavor, drizzle the sweet potato rounds with maple syrup before roasting. Serve them warm for the best texture and flavor.
