- 2 large sweet potatoes
- 2 tablespoons olive oil

- 4 ounces goat cheese, crumbled
- 1 cup cranberries (fresh or frozen)
- 1/2 cup balsamic vinegar
- 1–2 tablespoons sweetener (honey, maple syrup, or sugar)
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the sweet potatoes into ½-inch rounds and toss them with olive oil, salt, and pepper.
- Spread the sweet potato rounds on a baking sheet and roast for 25 minutes until tender and slightly caramelized.
- In the meantime, prepare the cranberry balsamic glaze by simmering cranberries, balsamic vinegar, and the sweetener until it thickens.
- Once the sweet potatoes are ready, top them with crumbled goat cheese and drizzle with the cranberry glaze.
Notes
For a deeper flavor, drizzle the sweet potato rounds with maple syrup before roasting. Serve them warm for the best texture and flavor.
