  • 4 medium sweet potatoes (about 2 lbs)
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 cup whole milk
  • 1/2 cup chopped pecans
  • 2 cups crushed cornflakes
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes into chunks. Boil them in salted water until they are fork-tender, about 15-20 minutes. Drain the sweet potatoes and mash them until smooth.
  3. In a large bowl, mix the mashed sweet potatoes with softened butter, whole milk, brown sugar, and cinnamon until the mixture is creamy.
  4. In a separate bowl, combine crushed cornflakes, chopped pecans, melted butter, and a little more brown sugar to make the topping.
  5. Spread the sweet potato mixture evenly in a greased baking dish. Then, sprinkle the cornflake topping over the sweet potato layer.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and golden brown.
