Description

A delicious blend of sweet, earthy roasted sweet potatoes topped with gooey melted cheese, these bites are perfect for snacks or appetizers.


Ingredients

  • 2 large sweet potatoes, sliced into 1/4-inch rounds
  • 12 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • About 1 teaspoon shredded cheese (cheddar, Gruyère, or mozzarella) per round
  • Chopped fresh herbs or smoked paprika for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
  2. Slice sweet potatoes into 1/4-inch rounds and toss with olive oil, salt, and pepper.
  3. Arrange sweet potato rounds on the baking sheet in a single layer and roast for 18–22 minutes, flipping once, until tender.
  4. Remove from oven and top each round with cheese.
  5. Return to the oven under the broiler for 60–90 seconds until the cheese bubbles and just begins to brown.
  6. Finish with chopped herbs or a pinch of smoked paprika and serve warm.

Notes

For added flavor, consider using a mix of cheeses and topping with fresh herbs. Store leftovers in an airtight container and reheat in the oven for best texture.
