- 2 large sweet potatoes, sliced into 1/4-inch rounds
- 1–2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- About 1 teaspoon shredded cheese (cheddar, Gruyère, or mozzarella) per round
- Chopped fresh herbs or smoked paprika for garnish
Instructions
- Preheat oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
- Slice sweet potatoes into 1/4-inch rounds and toss with olive oil, salt, and pepper.
- Arrange sweet potato rounds on the baking sheet in a single layer and roast for 18–22 minutes, flipping once, until tender.
- Remove from oven and top each round with cheese.
- Return to the oven under the broiler for 60–90 seconds until the cheese bubbles and just begins to brown.
- Finish with chopped herbs or a pinch of smoked paprika and serve warm.
Notes
For added flavor, consider using a mix of cheeses and topping with fresh herbs. Store leftovers in an airtight container and reheat in the oven for best texture.
