Description

Tender, juicy chicken thighs cooked in a rich lemon garlic butter sauce, perfect for busy weeknights.


Ingredients

  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon oil (for browning)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon honey or Dijon mustard
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon cold water (optional, for thickening)

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. Brown the thighs skin-side down in a hot skillet with oil for 3-4 minutes per side.
  3. Transfer chicken to a slow cooker.
  4. In a bowl, mix together melted butter, lemon juice, lemon zest, minced garlic, chicken broth, and honey or Dijon.
  5. Pour the sauce over the chicken thighs in the slow cooker.
  6. Cook on Low for 6-7 hours or on High for 3-4 hours.
  7. Optionally, for a thicker sauce, make a cornstarch slurry and stir it into the sauce before the last 20-30 minutes of cooking.
  8. Serve hot, spooning extra sauce over the chicken.

Notes

If in a rush, browning the chicken can be skipped, but it’s recommended for enhanced flavor. Adjust the acidity by adding more lemon juice to taste before serving.
