Description

Delicious and visually stunning stuffed peppers packed with flavor and nutrients, perfect for any occasion.


Ingredients

  • 4 bell peppers
  • 1 pound ground meat (beef or turkey)
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried herbs (oregano, basil, etc.)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the tops off the peppers and remove the seeds.
  3. Parboil the peppers in boiling water for about 5 minutes, then drain.
  4. In a large bowl, mix together the ground meat, cooked rice, diced tomatoes, garlic powder, onion powder, dried herbs, salt, and pepper.
  5. Stuff each pepper with the meat mixture until full.
  6. If using, sprinkle shredded cheese on top of the stuffed peppers.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30-35 minutes, uncovering for the last 10 minutes.
  9. Ensure internal temperature reaches at least 160°F (70°C).
  10. Serve hot, garnished with fresh herbs.

Notes

These stuffed peppers make a great meal prep option and can be stored in the fridge for up to 4 days.
