Description

Comfort food upgraded with a gooey cheese center that delights both kids and grown-ups.


Ingredients

Scale
  • 1.5 lb (700 g) ground beef
  • 1 large egg
  • 1/2 cup plain breadcrumbs
  • 1/4 cup whole milk
  • 1 small minced onion
  • 2 cloves minced garlic
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 46 oz (115–170 g) low-moisture mozzarella log
  • Ketchup or BBQ glaze for brushing

Instructions

  1. Combine ground beef, egg, breadcrumbs, milk, onion, garlic, salt, pepper, and Worcestershire sauce in a large bowl.
  2. Flatten the mixture on plastic wrap into a rectangle.
  3. Lay the mozzarella log lengthwise on the mixture.
  4. Roll the meat around the cheese log, sealing seams and tucking ends.
  5. Chill for 15–20 minutes.
  6. Brush with ketchup or BBQ glaze.
  7. Bake at 375°F (190°C) for 50–60 minutes until internal temperature reaches 160°F (71°C).
  8. Rest for 10 minutes before slicing.

Notes

If the cheese oozes out while baking, chill the loaf and press seams firmly. For a stronger sear, sear the loaf in a hot skillet for 1–2 minutes per side before baking.
