  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (30g) all-purpose flour
  • Cocoa powder for dusting ramekins

Instructions

  1. Preheat your oven to 425°F (220°C) and grease your ramekins, dusting them with cocoa powder.
  2. Melt the chocolate and butter together in a heatproof bowl until glossy.
  3. Whisk in the granulated sugar until combined.
  4. Add the eggs and egg yolks, whisking until smooth.
  5. Fold in the flour gently until just combined.
  6. Pour the batter evenly into the prepared ramekins.
  7. Bake for 12-14 minutes, until the edges are set but the center remains soft.
  8. Let cool for 1 minute, then run a knife around the edges to loosen and invert onto plates.
