Ingredients

  • 4 cups fresh baby spinach
  • 2 cups sliced strawberries
  • 1/2 cup feta cheese (optional)
  • 1/4 cup toasted pecans or almonds
  • 1/4 cup thinly sliced red onion (optional)
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and cracked pepper to taste

Instructions

  1. Rinse spinach in cold water and spin dry.
  2. Slice strawberries and set aside.
  3. In a large bowl, combine spinach, strawberries, cheese, nuts, and red onion (if using).
  4. In a separate jar, mix balsamic vinegar, olive oil, honey, salt, and pepper. Shake well to combine.
  5. Drizzle the dressing over the salad just before serving, tossing gently to combine.

Notes

For added sweetness, mix in mandarin oranges or diced avocado. If you want a vegan option, skip the cheese and use maple syrup instead of honey.
