- 1 teaspoon baking powder
- Pinch of salt
- 1/2 cup unsalted butter (melted)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- Juice of 1 lemon (about 2 tablespoons)
- 1 cup fresh strawberries (washed, diced)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
- Wash and dice fresh strawberries, then zest and juice your lemons, setting all aside.
- In a large bowl, melt the butter and allow to cool slightly. Whisk in the granulated sugar until combined.
- Add the eggs one at a time, stirring well after each addition, then stir in vanilla extract, lemon juice, and lemon zest.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, stirring gently until just combined.
- Carefully fold in the diced strawberries.
- Pour the batter into the prepared pan and smooth the surface. Bake for 25-30 minutes or until the edges are golden.
- Let cool completely in the pan on a wire rack, then cut into squares to serve.
