Description

Delightful treats combining sweet strawberries with zesty lemon, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 cup fresh strawberries (washed, diced)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
  2. Wash and dice fresh strawberries, then zest and juice your lemons, setting all aside.
  3. In a large bowl, melt the butter and allow to cool slightly. Whisk in the granulated sugar until combined.
  4. Add the eggs one at a time, stirring well after each addition, then stir in vanilla extract, lemon juice, and lemon zest.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, stirring gently until just combined.
  6. Carefully fold in the diced strawberries.
  7. Pour the batter into the prepared pan and smooth the surface. Bake for 25-30 minutes or until the edges are golden.
  8. Let cool completely in the pan on a wire rack, then cut into squares to serve.
