- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup granulated sugar
- 24 ounces cream cheese, softened
- 1/2 cup melted unsalted butter
- 2 cups graham cracker crumbs
- 3 tablespoons melted butter
- 1/2 cup freeze-dried strawberries or strawberry Jell-O powder
- 1 1/2 cups golden Oreo cookies, crushed
- 1 tablespoon fresh lemon juice
- 1/2 cup granulated sugar
- 1 1/2 cups chopped fresh strawberries
- White chocolate, melted, for drizzling
- Additional strawberry crunch mix, for sprinkling
Instructions
- Preheat oven to 325°F. Line a 9×13-inch baking dish with parchment and grease it well.
- In a large bowl, stir together graham cracker crumbs and melted butter until damp. Press into the bottom of the prepared pan and bake for about 10 minutes. Let cool.
- In another bowl, beat softened cream cheese with 1 cup granulated sugar until creamy. Add eggs one at a time, mixing well in between. Stir in vanilla until smooth.
- Spread cream cheese filling over the cooled crust and smooth it out. Bake for 40–45 minutes until mostly set but slightly jiggly in the center. Let cool completely then refrigerate for at least 4 hours or overnight.
- Combine chopped strawberries, 1/2 cup granulated sugar, and lemon juice in a pan. Heat on medium, stirring until soft and juice thickens, about 5–7 minutes. Set aside to cool.
- In a bowl, mix golden Oreo crumbles, melted butter, and freeze-dried strawberries or strawberry Jell-O powder until coated.
- Once cheesecake is chilled, lift it out and chop into chunks. Serve with strawberry sauce, strawberry crunch, and a drizzle of melted white chocolate.
Notes
Use fresh strawberries for enhanced flavor. Ensure cream cheese is softened to avoid lumps.
